Ingredients
- ½ cup
- semi-thawed frozen blueberries (leave 5–10 minutes at room temperature)
- 125 mL
- ⅓ cup
- rolled oats
- 80 mL
- ¼ cup
- unsweetened shredded coconut
- 60 mL
- 2 tbsp.
- Botanica Perfect Protein Vanilla
- 1 scoop (30 mL)
- Medjool dates, pitted
- 3 or 4
- 1–2 tbsp.
- honey
- 15–30 mL
- ½ tsp.
- ground cinnamon
- 3 mL
Directions
- Step 1
- Combine all ingredients in a food processor bowl. Blend until smooth.
- Step 2
- Use a spoon or your hands to shape the mixture into balls. Place on a tray.
- Step 3
- Serve immediately.
- Step 4
- Keep for 2–3 days in an airtight container in the fridge.
Tips
Chef’s secret: Using semi-thawed blueberries creates the perfect texture. I store the finished bites in the freezer and take them out 15–20 minutes before serving, so they stay fresh. They don’t maintain their shape well in the fridge.
