Ingredients
- 1 package
- Epic Tofu shish taouk-style marinated tofu cubes
- 400 g
- 1 tbsp
- neutral oil
- 1
- small tomato, diced
- ¼ cup
- pickled turnips, finely julienned
- ¼ cup
- parsley, chopped
- ¼ cup
- vegan feta, crumbled
- 2 tbsp
- mint, chopped
- 2 tbsp
- dill, chopped
- A few small wooden skewers for assembly
- For the garlic sauce:
- ⅓ cup
- mayonnaise
- 1–2
- cloves garlic
- 1 tbsp
- lemon juice
- Generous pinch of salt
Directions
- Step 1
- In a bowl, combine all garlic sauce ingredients.
- Step 2
- Cover and refrigerate for at least 30 minutes to allow flavours to develop.
- Step 3
- Thread about 4 cubes of tofu onto each skewer.
- Step 4
- Heat oil in a skillet over medium-high heat, then add skewers.
- Step 5
- Cook for about 10 minutes, turning skewers over to brown all sides.
- Step 6
- Place skewers onto a serving plate and top with tomatoes, turnip, parsley, feta cheese, mint and dill.
- Step 7
- Drizzle with garlic sauce and serve.
