Puffed Rice Oat Bars

No-bake recipe.

Ingredients

2 cups
rolled oats
2 cups
organic cocoa rice puff cereal
½ cup
sunflower seeds
¾ cup
dark chocolate chips
1 cup
raw or roasted almond or peanut butter
1 cup
organic brown rice syrup
1 tsp.
ground cinnamon

Directions

Step 1
In a large bowl, combine the first three ingredients.
Step 2
In a small saucepan, bring nut butter and rice syrup to a boil, stirring constantly to prevent the mixture from sticking to the bottom. Cook for 3 minutes then remove from heat.
Step 3
Pour the mixture over dry ingredients and use a spatula to combine them. The mixture will become harder to stir. This is normal as the stickiness is needed to make the bars.
Step 4
To avoid melting the chocolate chips, let the nut butter and syrup mixture cool for a few minutes before adding it to the rest.
Step 5
Line a cookie sheet with parchment or wax paper.
Step 6
Spread the mixture evenly on the pan, then use your hand or rolling pin to flatten it.
Step 7
Refrigerate for 20 minutes, cut into bars and serve. Can be stored in the fridge for 10 days in an airtight container.
