Directions
- Step 1
- Preheat the BBQ to high heat.
- Step 2
- Remove the cauliflower leaves, stalk, and core. Cut the core so that you can lay the cauliflower flat on a work surface.
- Step 3
- Mix the olive oil, honey, tomato paste, curry powder, smoked paprika, salt, and pepper in a large bowl. Blend well.
- Step 4
- Lay two large sheets of aluminum foil on a work surface in a cross shape. Place the cauliflower in the middle.
- Step 5
- Pour the marinade over the cauliflower, coating completely. Fold the aluminum foil into a pouch around the cauliflower with the opening on the top.
- Step 6
- Put the pouch on the BBQ rack and cook for 30–40 minutes. *Pierce the cauliflower after 30 minutes. If it’s tender, remove from heat. Otherwise, continue cooking for 10–15 minutes.
- Step 7
- Meanwhile, grill the almonds in the oven on grill mode.
- Step 8
- Once the cauliflower is cooked, garnish with the grilled almonds and parsley. Add a pinch of salt and enjoy.
