Directions
- Step 1
- Melt 80 mL (1/3 cup) chocolate wafers in a double boiler over low heat.
- Step 2
- Place melted chocolate, hazelnut butter, 3 pitted dates, maca powder, vanilla and salt in a food processor. Blend until smooth.
- Step 3
- Using a small knife, cut a date lengthwise and remove the pit. Gently open and fill with 5 mL (1 tsp.) of nut mixture. Place a whole hazelnut on filling and press into place. Place date on a parchment-lined baking sheet. Repeat with remaining dates. Refrigerate for 1 hour.
- Step 4
- Melt remaining chocolate wafers in a double boiler. Remove stuffed dates from refrigerator and add 4 at a time to melted chocolate. Gently stir to coat and return to baking sheet. Sprinkle with a pinch of the garnish of your choice. Repeat with remaining dates.
- Step 5
- Refrigerate dates until chocolate has set. They will keep in an airtight container in the refrigerator for 10–12 days.
