Directions
- Step 1
- Add all dressing ingredients to blender and purée until creamy and even. Set aside.
- Step 2
- In a small saucepan on low heat, cook quinoa in a large amount of boiling water for around 15 minutes or until grains are tender, but still crunchy. Rinse in cold water and drain thoroughly. Set aside.
- Step 3
- Divide quinoa into serving bowls, then top with equal amounts of greens, chickpeas, cucumber, carrots, beets, and sesame seeds, if desired. Drizzle with dressing and enjoy.
