Description
Parties are known for their dips and spreads. Yet besides hummus, vegan options are quite limited. Here is a healthy vegan recipe made with cashew cream, spinach, and artichokes. An easy to prepare crowd-pleaser. Delicious when served fresh out of the oven with chips.
Ingredients
- 1½ cups
- frozen spinach
- ½
- onion, chopped
- 1
- jar of marinated artichoke hearts
- 1 tbsp.
- olive oil
- 1½ cups
- cashew cream
- ½ cup
- nutritional yeast
- 3
- cloves of garlic, minced
- 2 tbsp.
- apple cider vinegar
- 1 tsp
- dried basil
- 1 tsp
- dried parsley
- A pinch of cayenne
- Salt and pepper, to taste
Directions
- Step 1
- Preheat the oven to 175 °C (350 °F). Thaw and drain spinach.
- Step 2
- Sauté onions, spinach and artichokes in a little olive oil for 5 minutes.
- Step 3
- In a mixer, add cashews, nutritional yeast, garlic, vinegar, and spices. Blend and pour into a baking dish, then place in the oven. Bake for 15-20 minutes. Serve with tortilla chips or crackers. It’s the perfect potluck dish!
