Description
As a mom with young kids, I am always trying to come up with new snack ideas and healthy desserts. For Easter, Sky, my eldest, helped me make no-bake cookies that only have a few ingredients. They really look like little bird’s nests!
Ingredients
- 1 ½ cups
- chocolate chips
- ½ cup
- peanut butter
- ¼ cup
- coconut oil
- ¼ cup
- brown rice syrup
- 2 cups
- rolled oats
- 1 cup
- puffed rice
- 1 cup
- desiccated coconut
- Raw almonds
- Dark chocolate-covered almonds
Directions
- Step 1
- Using a double boiler, melt chocolate chips, peanut butter, coconut oil and brown rice syrup. Once melted and thoroughly combined, remove from heat.
- Step 2
- In a large bowl, combine wet ingredients with rolled oats, puffed rice and coconut. Mix well.
- Step 3
- On a baking sheet lined with wax paper, create little nests using a spoon.
- Step 4
- Cool in the fridge for at least 15 minutes.
- Step 5
- Place a few almond “eggs” in each nest.
