Directions
- Step 1
- Cook quinoa according to package directions. Chill in the fridge.
- Step 2
- Using a Microplane-style grater, scrape 1/2 tbsp. (7.5 ml) of orange zest. Set aside.
- Step 3
- Cut segments from the 3 oranges, making sure to work over a bowl to catch any juice that flows out. Save 2 tbsp. (30 ml) of orange juice for the dressing.
- Step 4
- In a large bowl, combine quinoa, orange segments, strawberries, lentils, kale, pecans, and feta. Mix well.
- Step 5
- In a small bowl, combine the reserved orange zest and juice, olive oil, apple cider vinegar, and maple syrup. Stir the dressing into the salad. Season to taste and mix well.
