Fresh quinoa and lentil salad

Ingredients

quinoa
250 ml

oranges

kale
750 ml
pecans
125 ml
feta
125 ml
olive oil
80 ml
apple cider vinegar
60 ml
maple syrup
15 ml
Salt and pepper to taste

Directions

Step 1
Cook quinoa according to package directions. Chill in the fridge.
Step 2
Using a Microplane-style grater, scrape 1/2 tbsp. (7.5 ml) of orange zest. Set aside.
Step 3
Cut segments from the 3 oranges, making sure to work over a bowl to catch any juice that flows out. Save 2 tbsp. (30 ml) of orange juice for the dressing.
Step 4
In a large bowl, combine quinoa, orange segments, strawberries, lentils, kale, pecans, and feta. Mix well.
Step 5
In a small bowl, combine the reserved orange zest and juice, olive oil, apple cider vinegar, and maple syrup. Stir the dressing into the salad. Season to taste and mix well.
