Directions

- Infusion
In a glass measuring cup, combine the tea bags, mint leaves, lemon zest and anise seeds. Pour in the boiling water and honey. Stir well. Let infuse for 10 minutes.

- Strain the infusion through a sieve set over a measuring cup or bowl. Compost the aromatics. Let the infusion cool. Add the lemon juice.

- Mocktails
Fill four 1 ⅓-cup (325 ml) glasses with ice cubes. Pour ⅓ cup (75 ml) of the infusion into each glass and top off with ⅓ cup (75 ml) of the sparkling water. Stir well. Garnish each glass with a lemon wedge and a mint leaf. Serve immediately.
