Directions
- Step 1
- Place oven rack in middle position and preheat oven to 200°C (400°F).
- Step 2
- Combine 15 mL (1 tbsp.) olive oil, chives, mint, honey, orange zest, and half the orange juice.
- Step 3
- Place trout fillets on a dish and pour herb and orange mixture over fish; then leave to marinate.
- Step 4
- In the meantime, cut fennel bulbs and onion into very thin wedges.
- Step 5
- In a bowl, combine fennel, onion, remaining olive oil, remaining orange juice, and salt and pepper to taste.
- Step 6
- Place vegetable mixture on baking sheet and bake for 15 minutes.
- Step 7
- Remove from oven and place trout fillets in centre. Season trout with salt and pepper and bake for another 10 minutes or until fish is cooked through.
- Step 8
- Serve with orange wedges and wholegrain basmati rice.
