Description

Ingredients
- 2 cups
- rolled oats
- 2 cups
- organic cocoa rice puff cereal
- ½ cup
- sunflower seeds
- ¾ cup
- dark chocolate chips
- 1 cup
- raw or roasted almond or peanut butter
- 1 cup
- organic brown rice syrup
- 1 tsp.
- ground cinnamon
Directions
- Step 1
- In a large bowl, combine the first three ingredients.
- Step 2
- In a small saucepan, bring nut butter and rice syrup to a boil, stirring constantly to prevent the mixture from sticking to the bottom. Cook for 3 minutes then remove from heat.
- Step 3
- Pour the mixture over dry ingredients and use a spatula to combine them. The mixture will become harder to stir. This is normal as the stickiness is needed to make the bars.
- Step 4
- To avoid melting the chocolate chips, let the nut butter and syrup mixture cool for a few minutes before adding it to the rest.
- Step 5
- Line a cookie sheet with parchment or wax paper.
- Step 6
- Spread the mixture evenly on the pan, then use your hand or rolling pin to flatten it.
- Step 7
- Refrigerate for 20 minutes, cut into bars and serve. Can be stored in the fridge for 10 days in an airtight container.
