I call it my Mason jar insta-soup It’s main ingredients are foods I like to keep on hand at all times, which means that I can whip it up in a flash!

Ingredients

  • The vegan
1 tbsp.
brown miso
½ tsp.
toasted sesame oil
½ tsp.
tamari
1 tsp.
sriracha
½ cup
finely chopped napa cabbage
1 pkg.
rice vermicelli
½ cup
chopped broccoli

mushrooms, chopped
½ cup
soft tofu, cubed
A handful of green pea shoots
  • The vegetarian

vegetable bouillon cube
1 tbsp.
tamari

clove garlic, minced
1 tsp.
lime juice

zucchini, spiralized

hard-boiled egg, halved
½ cup
carrots, julienned

handful fresh cilantro

1 tbsp.
herbes salées (salted preserved herbs)
2 tbsp.
Bragg Liquid Aminos
½ tbsp.
minced fresh ginger

cooked chicken, shredded

1 ½ cups
red cabbage, shredded

Directions

Step 1
The vegan
  1. Place all ingredients into a wide-mouth glass jar in the order listed above. Close the lid and refrigerate. It will keep for up to one week in the fridge.
  2. When you are ready to eat it, simply pour 375 mL (1 ½ cups) boiling water into the jar. Wait 5 minutes, mix gently and enjoy your insta-soup!
Step 2
The vegetarian
  1. Place all ingredients into a wide-mouth glass jar in the order listed above. Close the lid and refrigerate. It will keep for up to a week in the fridge.
